Italian grinder-inspired pasta salad made with classic sub ingredients and tossed in a flavorful lightened up creamy dressing.

Ingredients

  • 12 ozpasta (cooked and cooled, i like rotini or bowtie pasta- use chickpea pasta or whole wheat for higher fiber)
  • 2 cupscucumber (diced (~1 large english cucumber))
  • 2 cupscherry tomatoes (halved)
  • 2 cupsfinely shredded cabbage or coleslaw mix
  • 1 cupsweet onion (diced)
  • 1 cupbanana peppers (chopped)
  • 6 oz.deli turkey (chopped)
  • 6 ozdeli ham (chopped)
  • 6 ozturkey pepperoni or salami (chopped)
  • 6 ozprovolone cheese (chopped)
  • ¾ cupplain greek yogurt
  • 2 tbspmayonnaise
  • 2 tbspwhite wine vinegar
  • ¼ cupparmesan cheese
  • 1 tbsphoney
  • 1 clovegarlic (finely minced or microplaned)
  • 1 tbspdijon mustard
  • ½ tspsalt
  • ¼ tspblack pepper

Directions

    In a small bowl, combine the dressing ingredients and whisk together until fully combined. Add additional salt/pepper to taste.

    In a large bowl, add the pasta salad ingredients: cooked pasta, cucumbers, tomatoes, cabbage, sweet onion, banana peppers, turkey, ham, salami, and provolone cheese.

    Pour the dressing over the pasta salad ingredients and toss gently to combine until the dressing evenly coats everything.
