Add 16 ounces sliced mushrooms, 2 tablespoons olive oil, 2 tablespoons soy sauce, 3 tablespoons grated parmesan, 1 teaspoon garlic powder, 1 teaspoon minced fresh thyme, ½ teaspoon salt, and ¼ teaspoon ground black pepper to a medium bowl. Toss to coat the mushrooms evenly.
Add the mushrooms to the air fryer basket in an even layer. Air fry at 380°F for 5 minutes.
Shake the basket and cook for another 5-7 minutes, or until tender.
