This casserole is a baked dish that layers bacon, whisked eggs, and cheese in a single pan. It’s a crustless, low-carb option that still feels indulgent. Similar to a frittata but heartier, it’s designed to feed several people at once, making it ideal for family breakfasts or brunch gatherings.

Ingredients

  • 1 lbbacon (cooked until crispy and chopped)
  • 10 largeeggs
  • 1 cupmilk (or half-and-half for richness)
  • 2 cupsshredded cheddar cheese (or mozzarella)
  • 1 smallonion, finely chopped (optional)
  • 1 cupspinach or bell peppers (optional, for added nutrition)
  • 1 teaspoongarlic powder

  • ½ teaspoonblack pepper
  • 2 tablespoonsfresh chives or parsley, chopped (optional garnish)
