Ingredients

  • 1 1/2 pounds ground beef (lean or extra lean)
  • 1 small onion (finely chopped or grated)
  • 2 large eggs
  • 1/4 cup milk
  • 1/3 cup panko breadcrumbs
  • 3 tablespoons parmesan cheese
  • 3 cloves garlic (minced)
  • 1/4 cup parsley (finely chopped)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar

Directions

  1. 1

Preheat the air fryer to 200C/400F.

  2. 2

In a large mixing bowl, combine the ground beef and onion and mix well. Add the remaining ingredients until completely incorporated.

  3. 3

Using your hands, shape the meat mixture into a thick loaf. Transfer it into the air fryer basket diagonally.

  4. 4

Air fry the meatloaf for 18-22 minutes, or until the internal temperature 160F.

  5. 5

Whisk the glaze ingredients and brush on top of the meatloaf. Place it back in the air fryer for 1-2 minutes, or until warm.

  6. 6

Remove the meatloaf from the air fryer and let it sit for 5 minutes, before slicing and serving.
