This easy ham salad is a great way to use leftover ham. It features diced ham, hard-boiled eggs, pickle relish, mayo, onion, celery, bell pepper, and mustard.

Ingredients

  • 2 cupsfinely diced or ground ham (about 3/4 pound)
  • 3hard-boiled eggs, chopped
  • ¼ cupsweet pickle relish
  • ¼ cupmayonnaise
  • 2 tbspminced green onion
  • 2 tbspminced celery
  • 2 tbspminced red bell pepper
  • 1 tbspchopped fresh parsley
  • 2 teaspoonsdijon mustard
  • 1 tbsplemon juice
  • a large pinch of cayenne (optional)
  • salt and black pepper to taste

Directions

    Mix the ham salad: Mix everything but the salt, pepper and cayenne in a large bowl. Taste and add cayenne, salt and black pepper to taste. Chill.
