Weeknight dinners just got easier with this delicious Shrimp Tomato Soup made with jarred marinara sauce (aka spaghetti sauce) and tasty shrimp! It's so easy to make, you could have dinner on the table in no time!

Ingredients

  • 2 teaspoons olive oil
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper
  • ¾ teaspoon dried garlic
  • ¼ cup dry white wine (such as Sauvignon Blanc)
  • 2 cups low-sodium vegetable broth
  • ½ cup water
  • ½ cup orzo (uncooked )
  • 2 cups marinara sauce ((also known as spaghetti sauce))
  • 12 ounces large shrimp (peeled and deveined, optional)
  • 1 jarred roasted red pepper (roughly chopped)
  • 2 tablespoons chopped fresh oregano

Directions

    Heat oil in a large pot over medium heat. Once the oil is hot, add oregano, crushed red pepper, and garlic; sauté 30 seconds. Add wine;cook 1 minute.

    Add broth and water to pan; bring to a boil. Stir in orzo; cook 6 minutes or until al dente.

    Stir in marinara, shrimp, and red pepper; cook 4 minutes or until shrimp turn pink and cooked through.

    Place soup in each of 4 bowls, and top each serving with chopped oregano.
