Whether you eat a plant-based diet or not, this hearty mushroom stew that uses 3 different types of mushrooms will easily become a go-to favorite.

Ingredients

  • 1 packagedried porcini mushrooms
  • 2 tablespoonsoil
  • 1diced onion
  • 3minced garlic cloves
  • 2chopped carrots
  • ¼ cupmarsala wine
  • 1 tablespoonall-purpose flour
  • 8 ouncessliced cremini mushrooms
  • 8 ouncessliced white button mushrooms
  • 1 cupvegetable broth
  • 2 cupschopped green beans
  • 2 cupsfrozen peas
  • 1 tablespoontamari soy sauce
  • 2 tablespoonstomato paste
  • 1 ½ teaspoonssalt
  • 1 teaspoonfresh thyme, plus more for garnish
  • ½ teaspoonpaprika
  • ¼ teaspoonpepper
  • ¼ cupchopped italian parsley

Directions

    Add the porcini mushrooms to a small bowl and cover with 1 cup hot water. Let it soak for 20 minutes and save the water.

    Add the oil to a large pot and bring the heat to medium high.

    Add the onion, garlic, and carrots and cook for 5 minutes stirring frequently.

    Add the wine and cook for 5 more minutes.

    Add the flour and stir to coat the vegetables.

    Add the cremini and button mushrooms and cook while stirring for 5 minutes on medium heat.

    Chop the porcini mushrooms.

    Add the broth, reserved porcini water, porcinis, green beans, peas, soy sauce, tomato paste, salt, fresh thyme, paprika, and pepper. Stir.

    Bring to a boil, then simmer for 20 minutes.

    Stir in fresh parsley and serve. Top with more fresh thyme if desired.
