  • 1 largebeefsteak tomato (or heirloom tomato, diced)
  • 2 tbspbutter (salted)
  • ¼ cupheavy cream
  • 5leaves basil (sliced chiffonade)
  • 1 tspdiamond crystal kosher salt (plus more to taste)

Directions

  1. 1

Begin by bringing a large pot of salted water to a rolling boil.

  2. 2

Add the angel hair pasta and cook according to the package instructions until it's al dente. Drain, reserve pasta water, and set aside.

  3. 3

In the same pot, add the olive oil along with tomatoes over medium heat. Gently sauté them until they just start to soften.

  4. 4

Once the tomatoes are slightly cooked, add the drained cooked pasta back into the pot. Toss everything together gently to ensure the pasta is coated evenly.

  5. 5

To the pot, add salt, butter, and cream. Stir to combine until the butter is melted and incorporated.

  6. 6

Add some of your reserved pasta cooking water as needed to achieve the right thickness and consistency for your sauce. The sauce should be slightly loose.

  7. 7

Add half of the chopped basil into the skillet, giving everything a final toss to incorporate.

  8. 8

Transfer the Tomato Basil Pasta to serving plates or bowls, making sure to get plenty of the sauce and diced tomatoes in each portion. Garnish with remaining basil.
