Easy Chicken Pot Pie Casserole recipe – creamy chicken casserole loaded with mixed vegetables and cheese. Super easy to make and tastes great! Cooked chopped chicken, mixed veggies, sour cream, cream of chicken soup, cheddar cheese, onion powder, garlic powder, butter, and Ritz crackers. The whole family LOVED this easy chicken casserole. It is already back on the menu again this week!

Ingredients

  • 4 cups cooked chopped chicken
  • 1 (10-oz) package frozen mixed vegetables, (thawed)
  • 1½ cups sour cream
  • 1 cup shredded cheddar cheese
  • ½ tsp onion powder
  • ¼ tsp garlic powder
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • ¼ cup butter, (melted)
  • 1 sleeve Ritz crackers

Directions

    Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray.

    Combine chicken, vegetables, sour cream, cheddar cheese, onion powder, garlic powder, and cream of chicken soup. Spread into prepared pan.

    Combine crushed crackers and melted butter. Sprinkle over chicken mixture.

    Bake uncovered 30 to 40 minutes.
