Naturally sweetened, one-bowl muffins made with oats, zucchini, and melty dark chocolate!

Ingredients

  • 1 ½ cupsshredded zucchini ((2 small))
  • 1 ½ cupsold fashioned oats
  • ½ cupwhole wheat flour ((or additional oats))
  • 2 tablespoonsshelled hemp seeds ((optional))
  • ½ cuppitted medjool dates
  • ¼ cuppure maple syrup
  • 1 sticksalted butter, melted
  • 2eggs
  • 1 tablespoonvanilla extract
  • 1 ½ teaspoonsbaking soda
  • 1 teaspoonsea salt
  • 1 cupdark chocolate chips

    1. Preheat the oven to 350°F. Line 14 muffin tins with paper liners.2. In a blender, combine all ingredients, except the chocolate. After blending, mix in the chocolate chips.3. Divide the batter among muffin tins. Bake for 18-22 minutes, until just set. Add flaked sea salt, if desired. Enjoy!
