
This easy vegan Instant Pot black eyed peas recipe yields delicious and comforting Southern-style black eyed peas - no pre-soaking needed! Perfect as a traditional side dish for a New Year's Day, or year round as a simple and healthy plant-based meal. Gluten free, soy free, low fat, high protein, high fiber.
Rinse dried black eyed peas and pick them over to remove debris.
Press the Saute button of your Instant Pot. Add 2 tablespoons of oil or veggie broth/water if you cook without oil. Once hot, add chopped onions, green bell pepper, celery, and minced garlic. Saute until the vegetables soften, about 5 minutes, stirring to prevent sticking and adding more liquid if needed.
Mix in tomato paste, smoked paprika, thyme, cayenne, liquid smoke (if using), and salt (omit salt if using Better Than Bouillon vegetable stock). Add rinsed black eyed peas and water or veggie broth. Press Cancel.
Lock the lid in place, making sure that the vent lever is set to pressure. Press the Manual button and set the timer for 20 minutes. It will take about 10 minutes for the pressure to build.
Once the time is up and your Instant Pot beeps, follow 10-minute natural release opening method (let the timer reach 10 minutes, then press Cancel and turn the pressure knob to release steam - be careful not to burn yourself when the steam starts coming out!).
Carefully remove the lid. Stir the beans, adjust the seasoning to taste. Mix in cilantro and a few dashes of black pepper. Serve with plenty of your favorite hot sauce OR a squeeze of lemon juice at the table.
