This easy Pumpkin Bread is incredibly delicious, moist, and simply bursting with fall flavors! Quick, easy to make and a guaranteed hit with friends and family this holiday season. Bonus: No mixer needed!

Ingredients

  • 3 cupsall purpose flour
  • 1 teaspoonsalt
  • 1 teaspoonbaking powder
  • 1 teaspoonbaking soda
  • 4 teaspoonspumpkin pie spice
  • 2 ¼ cupscanned pumpkin ((not pumpkin pie filling))
  • 1 cupbrown sugar
  • ⅝ cupgranulated sugar
  • ¾ cupcanola oil (or vegetable oil or applesauce)
  • 3eggs (room temperature)
  • 1 tablespoonvanilla extract

Directions

    Preheat oven to 350°F. Lightly grease two 8x4 inch (1 pound) loaf pans. Set aside.

    In a large bowl, whisk together flour, salt, baking powder, baking soda and pumpkin pie spice. Set aside.

    In a medium bowl, whisk together pumpkin puree, brown sugar, granulated sugar, applesauce OR oil, eggs, and vanilla extract.

    Stir wet ingredients into dry ingredients, mixing just until moistened and combined.

    Pour half of the batter into each of the prepared loaf pans and bake for 50 to 55 minutes or until an inserted toothpick comes out clean.

    Cool for 10 minutes in the pan before removing to a wire rack to cool completely.
