Hearty Bean Salad

This hearty bean salad is full of fiber, protein, and healthy fats that will keep you satiated. It keeps well in the fridge for a week and works well on it's own or paired with another dish. The perfect meal prep salad dish.

Ingredients

  • 1 can garbanzo beans
  • 1 can white beans
  • 1 bunch organic parsley
  • 1 bunch organic cilantro
  • ½ red onion
  • 2 green bell peppers
  • ½ cup roasted red peppers (canned or jar)
  • ¼ cup banana peppers
  • 8 oz salami
  • 1 container mozzarella
  • ½ cup extra virgin olive oil
  • ⅓ cup red wine vinegar
  • 1 juice of a lemon
  • 1 tbsp oregano
  • 1 tbsp italian seasoning
  • 3 tsp sea salt
  • 2 tbsp dijon mustard

    rinse and drain your beans

    chop and dice all your veggies

    chop and dice your salami

    place everything in a large bowl

    place all your dressing ingredients in a measuring cup or bowl

    add dressing to salad and toss
