Cut the chicken breasts into thin strips. In a mixing bowl, combine the garlic powder, paprika, salt, and black pepper. Add the chicken strips to the bowl and toss to coat evenly with the seasoning.
Preheat the air fryer to 375°F (190°C) for about 3-5 minutes.
Spray the air fryer basket with cooking spray. Place the seasoned chicken strips in a single layer in the basket. Cook for 8 minutes, flipping halfway through, until the chicken is golden brown and cooked through.
Remove the cooked chicken from the air fryer. On each tortilla, place a layer of fresh spinach, followed by a generous amount of shredded mozzarella cheese, and the cooked chicken strips.
