Steak Tacos with Elote Corn Salad

Ingredients

  • 2 lbs steak (I recommend flank steak or carne asada. I used a rib eye because I had one in my freezer and it came out great too!)
  • 1 orange (juiced)
  • 2 limes (juiced)
  • 2 tsp kosher salt
  • 1 tsp pepper
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp paprika
  • 8 tortillas
  • Avocado oil
  • Toppings: avocado, salsa, guac, hot sauce, (whatever you like!)
  • 4 cobs of corn (about 3 cups of corn)
  • 2 limes (juiced)
  • 1/4 red onion (minced)
  • 1/2 jalapeno (minced)
  • 1/4 cup green onion (chopped)
  • 1/3 cup cilantro (chopped)
  • 1/4 cup Greek yogurt
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/4 cup cotjia cheese (feta works too!)

Directions

    Marinate your steak in the orange and lime juice for 20 minutes at room temp. Remove from the juice and coat in your seasonings.

    To cook the steak, either grill it, cook on a cast iron or use a sous vide. I used my sous vide at 135 degrees for 1 hour for it to be cooked medium. Then I seared it for about 1 minute on each side in my cast iron.

    Let it cool then slice into bite sized pieces.

    While your steak cooks, make the Elote Corn Salad! Cut the corn kernels off the cob into a medium bowl. I add them right in raw, but feel free to grill the corn before hand or sauté the kernels to get a char.

    Add in remaining ingredients and stir to combine. Season to taste.

    Heat your tortillas and prepare additional toppings. Assemble your tacos and enjoy!
