Salmon Stir Fry with Veggies is an easy way to whip up some delicious salmon – marinated cubed salmon stir fried with onions, peppers, and mushrooms! I recommend eating with rice too as the rice will soak up the yummy honey soy sauce!

Ingredients

  • 16 oz salmon
  • 2 onions, sliced
  • 2 bell peppers (any kind – green, red, yellow), sliced
  • 16 oz white button mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tsp cornstarch

Directions

    Pat the salmon down with a paper towel to dry, and then cut into 1 inch cubes and set in a mixing bowl.

    In the bowl, add soy sauce, corn starch, honey, and garlic, and toss to coat. If you are about to cook it, let it marinade at the very least 15-30 minutes. If you are making this ahead, cover and refrigerate for 30 minutes before cooking.

    Heat 1 tbsp oil in a cooking pan or wok, wait for the pan to heat up. Then using tongs, transfer salmon chunks in to pan, leaving some marinade in the bowl to be used later. Stir fry gently for about 5 minutes or until opaque and remove from heat.

    Add onions, peppers and mushrooms, and the marinade sauce that’s left in the bowl. Stir fry for about 4 minutes or until veggies have softened.Now, add the salmon back in to the pan. Stir fry everything together for about 1 more minute or for longer if you want it more well done. This is also a great time to taste and add salt as desired.
