Ingredients

  • for the chicken
  • 1 largechicken
  • 1loaf sourdough bread, torn into large pieces
  • fresh thyme
  • 4leeks, light green part only, roughly chopped
  • 4shallots, roughly chopped
  • 4carrots, roughly chopped
  • 2 headsgarlic cut in half
  • 6 tablespoonsbutter
  • olive oil
  • salt and freshly ground black pepper
  • for the salad
  • 1 headbutter lettuce, or lettuce of choice
  • for the dressing
  • 1 teaspoondijon mustard
  • 2 teaspoonsmaple syrup
  • 3 tablespoonschampagne vinegar
  • olive oil
  • salt and freshly ground black pepper

Directions

    Combine leeks, shallots, carrots, thyme leaves and torn bread. GENEROUSLY drizzle with olive oil and sprinkle with salt and pepper. Mix to combine.

    Drizzle the chicken with olive oil and place butter slices under the chicken skin. Stuff the chicken cavity with 2 halves of garlic and lots of fresh tyme.

    Place chicken on vegetable mixture and add salt and pepper to taste.

    Roast the chicken for 1 hour 10 minutes or until a meat thermometer registers 165 degrees.

    Combine salad dressing ingredients and pour over salad.

    Serve the salad and chicken and enjoy!
