Deliciously chewy, chocolaty snacks made without baking, featuring oats, coconut, and peanut butter.

Ingredients

  • 1 cuprolled oats
  • 1 cupshredded unsweetened coconut
  • ½ cupnatural peanut butter
  • ½ cuphoney or maple syrup
  • ½ cupdark chocolate chips
  • ¼ teaspoonsalt
  • 1 teaspoonvanilla extract

Directions

    In a medium saucepan over low heat, combine the peanut butter, honey (or maple syrup), and chocolate chips. Stir frequently until the mixture is completely melted and smooth, which takes about 2 to 3 minutes.

    Remove the saucepan from the heat. Quickly stir in the vanilla extract and salt.

    Add the rolled oats and shredded coconut. Mix until all the dry ingredients are evenly coated with the chocolate-peanut butter mixture.

    Line a baking sheet (or large plate) with parchment paper. Using a spoon or small cookie scoop, drop tablespoon-sized clusters of the mixture onto the prepared sheet.
