
It's soup season and that means it's time for my favorite creamy tomato tortellini soup. Creamy, packed with protein, and delicious - give it a try!
In a pan over medium high heat, cook the ground turkey. Season with oregano, pepper, and salt.
To the same pan, add the onion and garlic and stir into the meat.
Transfer the meat to a pot, and add in the full carton of soup.
Bring to a boil, add in the tortellini, and cook for 3 minutes.
Reduce to medium heat, stir in the greek yogurt and spinach. Let this simmer for an additional 2 minutes.
Serve with freshly grated parmesan if desired.
