Curry Roasted Chicken with Star Anise

Chicken pieces smothered in a sweet curry sauce with star anise and baked to perfection.

Ingredients

  • 6 chicken pieces (free range)
  • 3/4 cups cooking oil
  • 3/4 cups tomato sauce
  • 1/2 cup Worcestershire sauce
  • 3 red onions (finely chopped)
  • 4 teaspoons garam masala (or curry powder if you prefer)
  • 3/4 cups fruit chutney
  • 1 teaspoon salt
  • 2 teaspoon mustard powder
  • 5 whole star anise

Directions

    Preheat the oven to 180 degrees Celsius. Arrange the chicken pieces in an oven safe roasting dish.

    Mix the rest of the ingredients together in a mixing bowl.

    Pour sauce over the raw chicken pieces.

    Cover and bake for 40 minutes, remove lid and bake for another 15 minutes at 180 degrees Celsius until golden and sticky.
