Make this delicious corned beef and tater tots casserole for your family and friends. It's a recipe inspired by corned beef hash, but easier.

Ingredients

  • 1 tablespoon olive oil
  • 2 (12-ounce) cans canned corned beef (such as Libby’s)
  • 1 small yellow onion, chopped
  • 1 medium green bell pepper, chopped
  • 8 ounces Cheddar cheese, shredded (about 2 cups)
  • 1 (28-ounce) package frozen potato tots (such as Tater Tots)
  • 12 large eggs
  • 1/2 cup whole milk
  • 1/4 teaspoon black pepper
  • 1 teaspoon kosher salt, divided
  • 2 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Sliced pickled jalapeños if desired, for garnish

    Preheat the oven to 350°F.

    Brown the corned beef and vegetables: Heat the oil in a large nonstick skillet over medium-high heat. Add the corned beef, onion, and bell pepper. Cook, stirring often and breaking up beef with a wooden spoon, until the corned beef is browned and the vegetables soften, about 10 minutes.

    Build the casserole:  Spread the corned beef mixture in the bottom of a 9x13-inch baking dish. Sprinkle the cheese evenly over the corned beef. Top with the potato tots in an even layer. Whisk the eggs, milk, black pepper, and 1/2 teaspoon of salt in a large bowl until well combined; pour over the potato tots. Mix the smoked paprika, chili powder, garlic powder, and remaining 1/2 teaspoon salt in a small bowl until combined. Sprinkle evenly over potato tots.
