
Sun-dried tomato dressing is a delicious, creamy vinaigrette that will add bold, Italian-inspired flavors to any of your favorite salads and power bowls. An immersion blender allows you to make this in minutes, and results in the perfect, creamy emulsion.
In a large mason jar or glass measuring cup, add the olive oil, sun-dried tomatoes, vinegars, lemon juice, basil leaves, Italian seasoning, and 2 tablespoons of water.
Using an immersion blender, pulse to blend the mixture for about 15-20 seconds to create a creamy vinaigrette. Add more water, if needed.
Add the sweetener and blend again. Add salt and pepper to taste.
Serve immediately or store in the refrigerator for later.
