Chicken taco casserole is a hearty and flavorful dish that combines the classic flavors of tacos in a warm, cheesy casserole. It’s an easy-to-make recipe that can feed a crowd and is perfect for busy weeknights or gatherings. With layers of seasoned chicken, tortillas, melted cheese, and other taco-inspired toppings, this casserole delivers all the goodness of a taco in every bite. Ingredients

  • 3 cupscooked and shredded chicken (rotisserie chicken works great)
  • 1packet taco seasoning (or homemade)
  • 1 candiced tomatoes with green chilies (like rotel), drained
  • 1 canblack beans, drained and rinsed
  • 1 cancorn, drained
  • 1 cupsour cream
  • 1 ½ cupssalsa
  • 2 cupsshredded cheddar or mexican blend cheese, divided
  • 8 smallflour or corn tortillas, torn into pieces
  • ½ cupsliced black olives (optional)
  • ¼ cupgreen onions, chopped (for garnish)
  • fresh cilantro, chopped (for garnish)

Directions

    Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

    In a large bowl, combine the shredded chicken, taco seasoning, diced tomatoes with green chilies, black beans, corn, sour cream, salsa, and 1 cup of the shredded cheese. Mix until everything is well combined.

    Spread a thin layer of the chicken mixture on the bottom of the prepared baking dish.

    Add a layer of torn tortillas over the mixture.

    Repeat the layers, starting with the chicken mixture, followed by the tortillas, until all ingredients are used. Finish with a layer of the chicken mixture on top.

    Sprinkle the remaining 1 cup of shredded cheese evenly over the top of the casserole.

    If using, add sliced black olives over the cheese.

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
