
In a medium bowl add almond flour and xanthan gum. Stir until evenly mixed. Pour in the hot water and immediately mix with a spatula until a dough forms. The almond flour should be completely incorporated into the dough. The dough should not be too sticky to touch.
Roll the dough out between 2 sheets of parchment paper until it is about 1/4 inch thick. Slice dough into 1/4 inch strips.
Frying: Add enough oil to a medium saucepan until you have 1/2 inch of oil. Bring the oil to medium heat (about 350°F). Gently add in fries and cook until golden on both sides, this should only take a few minutes. Remove from oil and place onto a plate lined with a paper towel to drain excess oil.
Air Fryer: Place fries in a single layer in your air fryer, making sure none overlap. If desired, you can spray the surface of the fries with cooking oil spray. This is not essential to cooking the fries but it will help them have a more golden brown color. Set your air fryer to 400°F. Cook for about 5 minutes without preheat or until golden and crispy. Air fryer cooking time can vary a lot depending on the air fryer brand and some run hotter than others. I always recommend cooking a few minutes less than the recommended cooking time and increase as needed.
Oven: Preheat oven to 400°F. Place your fries on a baking sheet lined with parchment paper. If desired, spray fries with cooling oil spray (similar to the air fryer method, this is not essential to cooking the fries but it will help them have a more golden brown color). Bake for about 13 minutes or until lightly golden and crispy.
If desired, season fries with salt before serving. Serve while warm with your favorite dipping sauce.
