Ingredients

  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • ½ tablespoon sriracha, (or to taste)
  • 1 teaspoon Worcestershire sauce
  • 1 ¼ pound sirloin steak, (cut into 1-inch cubes)
  • 1 tablespoon olive oil
  • 3 tablespoons butter, (divided)
  • 1 pound gold baby potatoes, (quartered)
  • ½ teaspoon salt, (or to taste)
  • ¼ teaspoon fresh ground black pepper
  • 4 garlic cloves, (minced)
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • Salt and freshly cracked pepper
  • Parsley, (for garnish)
  • Parmesan, (for potatoes, optional)

Directions

  1. 1

In a large bowl combine soy sauce, olive oil, balsamic vinegar, sriracha, and Worcestershire sauce; whisk until combined.

  2. 2

Add steak bites to the marinade. Stir together and set aside to marinate.

  3. 3

Set a large 12-inch skillet over medium-high heat.

  4. 4

Add 1 tablespoon olive oil and 1 tablespoon butter.

  5. 5

When oil is hot and butter is melted, add potatoes to the skillet; season with salt and pepper, and cook for about 15 minutes, stirring frequently, until potatoes are cooked and tender. Remove potatoes from skillet and transfer to a plate; set aside.

  6. 6

Wipe down the skillet and set it back over medium heat; add the remaining 2 tablespoons butter, garlic, dried thyme, and dried rosemary.

  7. 7

Remove steak bites from marinade and shake off excess. Add the steak bites to the hot skillet, in one layer.

  8. 8

Cook for about 1 to 2 minutes on each side, or until browned.

  9. 9

Add the potatoes back to the skillet and heat through.

  10. 10

Taste for salt and adjust accordingly.

  11. 11

    Remove from heat.

  12. 12

Garnish with parsley and add a sprinkle of parmesan cheese over the potatoes.

  13. 13

    Serve.
