Rotel Sausage Hash Brown Muffins - the perfect grab-and-go breakfast! Bisquick muffins packed with eggs, sausage, hash browns, cheddar cheese, and a kick from Rotel tomatoes; they’re deliciously savory and super easy to make. Great for brunch spreads, meal prep, or any time you need a hearty snack!

Ingredients

  • 1 lb sausage
  • 1 (10-oz) can Rotel diced tomatoes and green chilies, (very well drained)
  • 1 cup Bisquick
  • 4 large eggs, (beaten)
  • 1½ cups shredded cheddar cheese
  • ¼ cup milk
  • 1 cup hash browns

Directions

    Preheat oven to 350ºF. Lightly spray a muffin pan with cooking spray or line with cupcake liners.

    In a skillet, cook sausage until no longer pink. Drain fat.

    Combine cooked sausage, drained Rotel, Bisquick, eggs, cheese, milk, and hashbrowns.

    Spoon batter into the prepared muffin pan. Fill the cups to the top.

    Bake for 20 minutes, until brown.
