Ingredients

  • 1½ -lbs boneless skinless chicken breasts (diced⁣)
  • 2 Tbsp olive oil
  • 3 cloves minced garlic
  • 1 Tbsp Italian seasoning (divided)
  • ½ tsp onion powder
  • salt and pepper (to taste)
  • 2½ cups chicken broth
  • 1 cup uncooked long-grain white rice
  • ¾ cup heavy cream
  • ⅓ cup grated parmesan cheese

Directions

    Using a sharp knife, cut the chicken into bite-sized pieces. Season chicken with 1 teaspoon of Italian seasoning.

    Heat olive oil in a large skillet over medium-high heat.

    Add diced chicken to the pan and cook until the chicken is browned, about 5 minutes. Remove the chicken from the pan and set aside.

    ⁣Add garlic to the skillet and cook for 30 seconds. Stir in chicken stock and uncooked rice. Bring to a boil, then reduce the heat to medium-low. Cover with and simmer for 15-20 minutes.⁣

    Stir in heavy cream and parmesan cheese. Add the chicken, remaining Italian seasoning, and onion powder and stir. Season with salt and black pepper to taste.
