S'mores Skillet Cookie is a warm delicious cookie made in a cast iron skillet, topped with sweet marshmallows, chocolate, and graham crackers!

Ingredients

  • 1 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs (at room temperature)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup graham cracker crumbs ((3 1/2 full crackers))
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chocolate chips ((semi-sweet or milk))
  • 2/3 cup mini marshmallows
  • 4 graham crackers (broken into pieces)
  • 1 cup mini marshmallows
  • 2 Hershey's milk chocolate bars (broken into pieces)
  • Vanilla ice cream (for serving (optional))

Directions

    Preheat your oven to 350 degrees F. Position one oven rack in the center of the oven and another rack in the top 1/3 of the oven.

    In a large mixing bowl, beat the butter, brown sugar, and granulated sugar on high speed until smooth and creamy, about 2 minutes.

    Add the eggs, one at a time, beating well after each addition. Then mix in the vanilla extract.

    In a medium mixing bowl, stir the flour, graham cracker crumbs, salt, baking soda, and cornstarch together. With your mixer on low speed, add the flour in two additions until it's just combined.

    Stir in the chocolate chips by hand.

    Press half of the cookie dough into the bottom of a 12-inch cast iron skillet. Sprinkle 2/3 cup of miniature marshmallows over the cookie dough. Then add the cookie dough in scoops to the pan and press over the marshmallows into a large solid cookie.

    Bake for 25-30 minutes, or until the edge of the cookie is golden brown.

    Carefully remove the pan from the oven and top the cookie with the graham cracker pieces, 1 cup of miniature marshmallows, and the Hershey's bar pieces.

    Place the skillet back into the oven on the rack in the top 1/3 of the oven. Turn the oven's broiler to high and cook until the marshmallows are toasted golden brown, about 1-3 minutes. Watch closely so that the marshmallows do not burn! (Unless that's how you like them, then you do you.)

    Carefully remove the cookie from the oven and cool for 10 minutes on a wire rack before serving. If desired, add scoops of vanilla ice cream in the center of the cookie.
