This Greek Chickpea Salad is ready in 10 minutes for the perfect easy lunch or light dinner! It's packed with crunchy vegetables, olives, feta, chickpeas and a zesty homemade Greek dressing. This is the perfect filling and healthy salad to add to your meal prep rotation.

Ingredients

  • 115 oz can chickpeas, drained and rinsed
  • 1 ½ cupsdiced cucumber
  • 1 ½ cupsdiced bell pepper
  • 1 cuphalved cherry tomatoes
  • ½ cupkalamata olives, pitted and halved (can also use castelvetrano or another variety)
  • optional: 1/3 cup chopped pepperoncini peppers
  • ½ cupcrumbled feta cheese (regular or vegan)
  • ¼ cupolive oil
  • 3 tablespoonsred wine vinegar
  • juice from 1/2 of a lemon (~1 tablespoon)
  • ½ teaspoondijon mustard
  • ½ teaspoongarlic powder
  • ½ teaspoondried oregano
  • ¼ teaspoonsalt
  • ¼ teaspoonblack pepper

Directions

    Drain and rinse chickpeas.

    Add to a mixing bowl with cucumber, peppers, tomatoes and olives.

    Whisk together all ingredients for Greek dressing.

    Toss salad in dressing and top with feta. Enjoy!
