
A comforting dessert made with simple ingredients. Creamy Rice Pudding with Sweetened Condensed Milk is like a warm hug in a bowl.
Combine 2 cups of water and rice into a heavy-bottomed, 2-quart saucepan. Over medium-high heat bring to a boil and reduce temperature to low. Simmer for 10-15 minutes or until the water is absorbed and the rice is tender.
Add the sweetened condensed milk, salt, and raisins. Cook and stir over medium heat until thick and creamy consistency. About 10-15 minutes. Stir constantly to prevent sticking to the bottom of the pan.
In a small bowl, add beaten egg to 1/4 cup milk.
Remove rice from heat and stir in egg/milk mixture. Cook on medium-low heat for 2 minutes more. Add a splash of milk if too thick.
Add butter, vanilla, and a sprinkle of cinnamon or nutmeg to taste.
Serve in individual bowls either warm or cold. Cover leftover rice pudding with plastic wrap and place in fridge.
