Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
Combine diced apples with 1/2 teaspoon of ground cinnamon in a medium bowl and set aside.
In a large bowl, mix rolled oats, remaining 1/2 teaspoon of ground cinnamon, brown sugar, and salt. In a separate bowl, whisk together melted butter, honey, and vanilla extract.
Pour the wet mixture into the dry ingredients and stir gently. Fold in the prepared diced apples.
Pour the mixture into the prepared baking pan, press down firmly, and bake for 25-30 minutes until golden brown.
Let cool for 10 minutes, then cut into bars and allow to cool completely on a wire rack.
