This Healthy Chicken Salad is delicious because it’s made with white meat chicken, non-fat greek yogurt, and zucchini. Enjoy with crackers or in a sandwich.

Ingredients

  • 1 small zucchini (finely grated and wrung out)
  • 2 large stalks celery (finely chopped)
  • 1/2 small onion (finely chopped)
  • 2 cans chicken (drained, I used 2-12.5 oz. cans)
  • 1/3 cup nonfat greek yogurt
  • 1/4 real mayonnaise
  • salt & pepper (to taste)

    Place all ingredients into bowl and stir until combined. Taste, adjust seasonings and serve as desired. I LOVE dipping crackers into this little concoction. Cover and store in refrigerator for up to 5 days {these covered bowls are GREAT for this}.
