This coleslaw for pulled pork comes together in just 5 minutes with only 5 ingredients. It's tangy without being overly sweet, and maintains its crunch thanks to being lightly dressed. It's the perfect pairing for pulled pork, whether stuffed in sandwiches or served as a refreshing side dish. You're going to love it for your next family meal or casual barbecue!

Ingredients

  • 1/4 c mayo (I used Primal Kitchen's avocado oil mayo)
  • 2 tsp apple cider vinegar
  • 1 tsp agave nectar
  • 1/8 tsp koser salt (Diamond Crystal brand)
  • 14 oz thinly sliced green cabbage (bagged coleslaw mix or cut fresh)

Directions

    Make the dressing first. Take out a small to medium bowl. Use a measuring cup to measure out the mayo and scoop it into the bowl with a spoon. Use measuring spoons to measure out the vinegar, agave, and kosher salt and place those into the bowl as well.

    Use a small whisk to stir together the dressing until well combined. It will start out lumpy at first, but keep going until it's smooth. Set aside.

    Place the cabbage into a large bowl. Pour the dressing over the cabbage then use tongs to gently combine the ingredients together until the cabbage is coated with the dressing. Serve.
