Ingredients

  • 1/2 cup dill pickle relish (or run a few pickles through the food processor)
  • 2 pounds lean ground beef
  • 1/4 cup crispy fried onions (sub in 2 TBSP onion flakes or 1 tsp onion powder)
  • 2 eggs
  • 1 cup panko bread crumbs
  • 1 TBSP worcesertershire
  • 1 tsp smoke flavor
  • 8 ounces sharp cheddar (small dice)
  • 16 slices bacon (uncooked, divided )
  • 1/2 cup ketchup (use any kind you like)
  • 1 TBSP maple syrup (or equal amount brown sugar)
  • 1 tsp srirach (optional)

Directions

    Preheat oven to 350˚

    drain most of the liquid out of the pickle relish

    to a bowl add the pickle relish, ground beef, fried onions, eggs, bread crumbs, and smoke flavor and worcesetershire sauce

    mix lightly

    use scissors to snip 6 bacon strips into pieces and gently mix them into the meatloaf

    gently mix in the cheese cubes

    form into a loaf and place in a 9x13 pan or a baking sheet, line with aluminum foil if you're worried about the mess

    top with the remaining bacon slices

    bake for 50-60 minutes or until cooked to 160˚ on a meat thermometor

    mix the ketchup and maple syrup ans sriracha if using together, brush over meatloaf

    brush with the glaze bake 5-10 more minutes
