Soft and chewy apple flavored cookies studded with chocolate chips. These cookies are just 3 ingredients and easy to make.
Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Add applesauce and oats to a large bowl. Stir until evenly mixed and all oats are coated in applesauce.
Stir in the chocolate chips until they are evenly incorporated.
Use a 1.5 tbsp cookie scoop to scoop out cookie dough. Release cookie dough onto prepared baking sheet, spacing the dough balls about 1.5 inches apart. Use the palm of your hand to press down on each cookie dough ball so that it forms a thick round disk. Smooth and reshape edges of cookies to make them round if needed. The cookies will not spread during baking so you want to shape the cookies to how you want the final product to be. If desired, add a few additional chocolate chips on top of each cookie. I did this for cookies that looked a little sparse on the chocolate or if the chocolate wasn't as visible on top.
Bake cookies for about 13-15 minutes. Let cookies cool on baking sheet before removing and eating. When cookies are cooled, they should come off the baking sheet easily.
