
This is my twist on the classic Cacio e Pepe which means “Cheese and Pepper” I added crispy spam for that extra salty umami bite. The flavor profile and combination is superb!
Cook and boil your pasta until al dente
Make your garlic pepper paste by pounding the ingredients together. Or just use fresh ground pepper.
Chop and cube your spam and brown it in a skillet and remove.
To same skillet, add butter, and garlic pepper paste. Toast until aromatic.
Add cooked pasta, cheese, and pasta water. Make sure heat is low.
Give it a mix and add spam. Garnish with more parmesan and parsley. Enjoy!
