
Arroz de Tamboril is a wonderful Portuguese rice dish made with Monkfish.
Place a medium shallow pot over medium heat. Once hot, add the olive oil, the chopped onion and pepper, lightly frying it for about 3 minutes.
Add in the garlic and bay leaf, let it cook for another minute before adding the diced tomatoes. Cook the mixture for 3 more minutes, stirring occasionally.
Add in the rice, let it fry for a few minutes before adding the wine. Once the alcohol has evaporated, add the fish stock. Season it with salt and pepper.
Cover the rice with a lid, reduce the heat to medium-low. Let it simmer until the rice is fully cooked but moist still. It should take around 30 minutes.
Add in the fish and prawns, if necessary, add 1 cup of water. Let it cook for 7 minutes.
Turn off the heat, stir in the butter. Add more salt and pepper if needed. Serve it with fresh roughly chopped cilantro
