Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 lb baby potatoes, quartered – Baby potatoes are perfect for roasting; they hold their shape and get crispy edges.
  • 3 tbsp olive oil, divided – Provides a rich flavor and helps to get those potatoes and chicken nicely golden.

In a large mixing bowl, toss the quartered baby potatoes with 1 1/2 tablespoons of olive oil, a generous pinch of salt and pepper, minced garlic, and half of the grated Parmesan cheese. Make sure each potato piece is evenly coated to get that golden, flavorful crust.

    Spread the seasoned potatoes evenly on a greased or parchment-lined baking sheet, and place it in the preheated oven. Bake for about 15 minutes, or until the potatoes start to soften slightly.
