Healthy and zesty Cowboy Caviar can be served as a dip or as a side salad!

Ingredients

  • 4 Roma tomatoes, diced and seeded
  • 2 avocados, diced
  • ⅓ cup red onion, chopped
  • 1-15 oz can black beans, drained and rinsed
  • 1-15 oz can black eyed peas, drained and rinsed
  • 1 red bell pepper, diced
  • ⅓ cup fresh cilantro, chopped
  • ⅓ cup extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 3 tbsp red wine vinegar
  • 1 tbsp honey
  • ½ tsp Dijon mustard
  • 1 tsp red pepper flakes
  • 1 tsp ground cumin
  • Salt and pepper to taste

Directions

    Make the dressing: whisk all dressing ingredients together in a small bowl or measuring cup until well combined.

    Place all veggies in a large bowl and drizzle dressing over them.

    Toss to combine and serve with chips as a dip, or as a side salad.
