It's a meal that requires no chopping or dicing, just some shredding. It is also easy to scale up or down and customize to your taste.

Ingredients

  • ½ cuploosely packed shredded rotisserie chicken
  • ½ cupshredded queso chihuahua
  • ¼ cupfresh pico de gallo, plus more to serve
  • ⅛ tsp.smoked paprika
  • 1burrito-size tortilla
  • 1 tbsp.olive oil
  • sour cream, to serve

Directions

    Stir together chicken, cheese, and pico de gallo in a medium bowl. Spread into an even layer on half of one side of the tortilla. Fold over the top of the tortilla.

    Heat olive oil in a large skillet over medium. Add quesadilla to pan and cook 2-3 minutes until bottom of tortilla is browned. Flip and cook 2-3 minutes longer until top of tortilla is browned and quesadilla is heated through.

    Cut quesadilla into wedges and serve with additional pico de gallo and sour cream.
