Crispy Lemon-Herb Roasted Potatoes

These lemon-herb potatoes are a versatile side dish that marries the bright, zesty flavor of lemon with the aromatic notes of oregano, pairing beautifully with a range of main courses from roasted chicken and pork to seafood.

Ingredients

  • 1 poundred potatoes, scrubbed and cut into ¾-inch pieces
  • 3 tablespoonsextra-virgin olive oil
  • 2 tablespoonslemon juice, plus grated zest and additional juice for garnish
  • ½ teaspoondried oregano
  • ½ teaspoononion powder
  • ½ teaspoonsalt
  • ¼ teaspoonground pepper
  • chopped fresh oregano for garnish (optional)

Directions

    Preheat oven to 425°F. Toss potatoes with 3 tablespoons oil, 2 tablespoons lemon juice, ½ teaspoon dried oregano, ½ teaspoon each onion powder and salt and ¼ teaspoon pepper on a large rimmed baking sheet until well coated.

    Roast, tossing once, until golden brown and crispy, 20 to 25 minutes. Transfer to a platter. Garnish with lemon zest, lemon juice and/or chopped oregano, if desired.
