Combine the yogurt, milk, oil or melted butter, eggs, and vanilla extract in a large bowl. Stir gently until just combined.
Mix in the flour, brown sugar, baking soda, and salt gradually.
Fold in the rainbow sprinkles carefully, avoiding color bleeding.
Scoop the batter into the muffin cups using a small cookie scoop, filling them about ¾ full.
Bake for 9–11 minutes, or until a toothpick inserted comes out clean.
Cool in the pan for 10 minutes before transferring to a wire rack.
