Easy oatmeal pancakes recipe features soft and fluffy pancakes you can make two ways: an easy rustic way and the blender way.

Ingredients

  • 1 cup old fashioned rolled oats
  • 1 cup oat milk* (unflavored)
  • 2 eggs
  • 2/3 cup all purpose flour**
  • 3 tbsp avocado oil
  • 3 tbsp brown sugar (light or dark)
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2-1 tsp ground cinnamon (to taste)
  • 1 tsp vanilla extract

Directions

    Stir together old fashioned rolled oats and oat milk and a bowl and let them soak for a few minutes. (10-15 minutes max.)
