This Autumn Harvest Honeycrisp Apple and Feta Salad combines crisp apples, roasted squash, tangy feta, crunchy nuts, and sweet cranberries for a seasonal dish that’s fresh, colorful, and full of flavor. Perfect for Thanksgiving, fall dinners, or a festive side dish.

Ingredients

  • 1 largehoneycrisp apple, thinly sliced
  • 2 cupsbutternut squash, peeled and cubed
  • 1 tablespoonolive oil
  • salt and pepper to taste
  • 6 cupsmixed salad greens (arugula, spinach, or spring mix)
  • ⅓ cupfeta cheese, crumbled
  • ⅓ cupdried cranberries
  • ¼ cupchopped pecans or walnuts
  • ¼red onion, thinly sliced
  • 3 tablespoonsolive oil
  • 2 tablespoonsapple cider vinegar
  • 1 teaspoondijon mustard
  • 1 teaspoonhoney (or maple syrup)
  • salt and black pepper to taste

Directions

    Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Roast 20–25 minutes until golden and tender.
