In a mixing bowl, whisk together soy sauce, honey, minced garlic, grated ginger, olive oil, a pinch of salt, and some black pepper until well combined. Add the peeled and deveined shrimp and toss to coat. Let it marinate for 15 to 20 minutes.
While the shrimp marinates, stir together mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl. Chill it in the fridge to let the flavors meld.
