Niçoise salad is a fresh-tasting French salad packed with tuna, potatoes, green beans, hard-boiled eggs, and tomatoes for a delightful summer meal.

Ingredients

  • ½ poundnew potatoes, quartered
  • ⅓ lbfresh green beans - rinsed, trimmed and blanched
  • 1can tuna
  • ½onion, thinly sliced
  • ¼ cuppitted nicoise olives(or kalamata)
  • ¼ cupchopped fresh parsley
  • ½ poundmixed salad greens
  • 1 cuplemon vinaigrette
  • 3hard-cooked eggs, quartered
  • 3roma (plum) tomatoes, thinly sliced
  • 4anchovy filets
  • 1 tablespooncapers

Directions

    Gather all ingredients.

    Bring a large pot of salted water to a boil; add potatoes and cook until tender but still firm, about 15 minutes. Drain and cool.
