Add a little spicy love to your coleslaw. This spicy coleslaw recipe is loaded with vegetables and vegan kimchi in a tangy oil-free dressing. As a side dish or an entree salad with grilled tofu, spicy coleslaw is divine!

Ingredients

  • 1 cup shredded White Cabbage
  • 1 cup shredded Purple or Red Cabbage
  • 1 bunch Green Onions (sliced thin)
  • 1/2 cup Shredded Carrots
  • 1 Red Bell Pepper (diced)
  • 1/4 chopped Parsley
  • 1/4 cup chopped Cilantro
  • 1 cup Kimchi (choose your heat; vegan kimchi comes in a variety of spice levels, chopped)
  • 1/4 cup kimchi juice for the kimchi bag/jar
  • 1/8 cup soy sauce or Tamari (gluten-free option)
  • 2 Tablespoons rice vinegar
  • 2 teaspoons lime juice
  • 1/4 inch fresh ginger grated
