If you need a quick weeknight side dish recipe that's a total crowd pleaser, try these sheet pan cowboy potatoes. Crispy potatoes are topped with barbecue sauce, cheese, peppers, and sour cream.

Ingredients

  • 4 slices bacon
  • 2 pounds round red potatoes, cut in 1-inch pieces
  • 3/4 cup coarsely chopped red onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 cup bottled barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1 jalapeño pepper, sliced
  • 1/4 cup chopped green onions
  • 1/4cup sour cream

Directions

    Cook Bacon Preheat oven to 425°F. In a large skillet, cook bacon until crisp, about 8 minutes. Reserve 3 Tbsp. bacon drippings, adding olive oil if needed to make 3 Tbsp. Drain bacon on paper towels. When cool enough to handle, crumble bacon.

    Prep Potatoes In a large bowl, toss potatoes and onion with reserved bacon drippings, salt, pepper, paprika, and garlic powder. Toss to combine. Spread on a 15x10x1-inch baking pan.

    Bake Bake 45 minutes or until tender and crispy; stirring after 30 minutes.

    Add Sauce Drizzle potatoes with barbecue sauce. Sprinkle with cheese. Bake 5 minutes more or until cheese is melted.
