Ingredients

  • 1 poundground beef
  • ½ cuponion, diced
  • 2 clovesgarlic, minced
  • 3 cupssweet potatoes, cubed (about 2 medium-sized potatoes)
  • 2 tablespoonshomemade taco seasoning (or 1 packet store-bought)
  • 1 cupwater
  • 1 cupfrozen corn
  • 1poblano pepper, seeded and diced
  • 1 cupshredded cheese (optional)
  • cilantro, avocado, and sour cream, for serving

Directions
