This easy chicken noodle soup recipe made with veggies and leftover chicken is warm, comforting, and ready to ladle into bowls in just over 30 minutes.

Ingredients

  • 1 tablespoonbutter
  • ½ cupchopped onion
  • ½ cupchopped celery
  • 4cans chicken broth
  • 1can vegetable broth
  • ½ poundchopped cooked chicken breast
  • 1 ½ cupsegg noodles
  • 1 cupsliced carrots
  • ½ teaspoondried basil
  • ½ teaspoondried oregano
  • salt and ground black pepper to taste

Directions

    Melt butter in a large pot over medium heat. Add onion and celery and cook until just tender, about 5 minutes.

    Add chicken broth, vegetable broth, chicken, egg noodles, carrots, basil, oregano, salt, and pepper. Stir to combine and bring to a boil.
